OK, I admit it: I'm impulsive! I heard this recipe today on KOTV for Pistachio Marble Cake and thought it sounded good and reasonable. Then I got to thinking about a cake I heard about at Weight Watchers that consists of a can of diet pop and a cake mix--that's all. Then the wheels of my mind (I hope) got to moving and I combined parts of both. So, here's my version:


Pistachio Marble Cake

Amount Measure Ingredient -- Preparation Method

1 pkg cake mix -- white, super-moist
1 1/2 c diet cola -- clear
1 pkg pudding mix, pistachio, sugar free
1 tsp almond extract
1/3 c chocolate syrup

Preheat oven to 350 degrees. Spray a bundt pan with butter spray and dust with flour.

In mixer bowl, pour in diet pop. Add dry cake mix and dry pudding mix. Stir to combine, then mix at medium speed for 2 minutes. Remove about 1/3 of the batter into a separate bowl and stir in the chocolate syrup until blended.

Pour 1/2 of the plain batter into the prepared bundt pan. Spread the chocolate batter over it. Top with the remainder of the original batter. Drag a knife through the batter to obtain a marbled effect.

Bake 45-50 minutes or until a cake tester inserted in the middle comes out clean. Let cool 15 minutes before removing from pan.

May dust with powdered sugar (1/2 T).
