Sour Cream Enchilada Casserole

12 oz chicken breast, no skin, no bone -- diced
1 tsp cumin
1 tsp garlic cloves -- minced
salt
pepper
1 can cream of mushroom soup, Healthy Request
1 can cream of chicken soup, Healthy Request
1/2 c sour cream, light
1/2 c onion -- chopped
12 corn tortillas -- halved
8 oz cheddar cheese -- shredded
4 1/2 oz green chiles

 

Season chicken cubes with cumin, garlic, salt and pepper. (I often use chicken tenders and do not chop until cooked.) Brown in a skillet that has been sprayed with cooking spray. Separately, combine soups, onion, chilies, and chicken.

 

In 9 x 13" pan, layer 1/2 of the tortilla halves, (I turn the cut edge to the outside of the pan.), 1/2 of meat/soup mixture, and 1/2 of cheese. Repeat.

 

Bake at 350° for 30 to 45 minutes.

NOTES : One can lower total calories and points by using nonfat sour cream and reduced fat or nonfat cheddar. I often use all of a medium onion.

Nacho Potato Soup

1 pkg au gratin potato mix -- dry
1 can corn
10 oz tomatoes with green chilies (Rotel)
2 c water
2 c milk, 2% lowfat
4 oz velveeta -- cubed
dash hot pepper sauce -- (optional)

 

In a 3 qt saucepan, combine the dry contents of the au gratin potato package, corn, tomatoes, and water; mix well. Bring to a boil. Reduce heat; cover and simmer for 15-18 minutes or until potatoes are tender. Add milk, velveeta, and hot pepper sauce, if desired. Cook and stir on low until the cheese is melted. Garnish with parsley, if desired.

NOTES : Excellent first dinner course for company meals or as accompaniment to a sandwich. Fast, but make sure to give potatoes time enough to be tender. I have used a 14.5 oz can of chopped tomatoes instead of the Rotel with good results that are less spicy.

Cherry Chocolate Torte

4 c applesauce, unsweetened -- heated
3 pkg jello, sugar free
27 graham crackers
3 c Cool Whip LiteŽ
3 tbsp sugar, powdered
1/2 tsp almond extract

 

Stir jello into heated applesauce (I heat it in the microwave) until dissolved.

 

FOLD together: cool whip, sugar, flavoring.

 

Layer jello and crackers, according to the size of your platter. I put three whole crackers side by side, resulting in 9 layers alternating with about 1/4 c jello. Frost with cool whip mixture.

 

Refrigerate for at least an hour or until thoroughly cool. May be made several hours ahead of time.

NOTES : The original recipe called for cherry flavored jello and chocolate graham crackers. I have used every flavor of cracker and several jello flavors and all are good.
