One Dish Chicken Bake

1 pkg StoveTop long grain/wild rice stuffing mix
1 1/2 lb chicken breast, no skin, no bone
1 can cream of mushroom soup, 98% fat free
1/3 c sour cream, light

375°

Stir stuffing crumbs, contents of vegetable/seasoning packer and 1 1/2 C hot water, just until moistened; set aside.

Place chicken in 2 qt baking dish that has been sprayed. Mix soup and sour cream; pour over chicken. Top with stuffing.

Bake at 375° fir 35 minutes or until chicken is cooked through.

NOTES : 278 calories 1.3 g fiber 5.3 g fat 6 points 

Original recipe calls for 1/4 c margarine to be added in with the stuffing and water. Some kind of butter substitute would add to the flavor.



Other tips:

For those with those "grilling machines": have you considered cooking frozen hash brown patties? Many are available for about 3 points each. I usually spray them with cooking spray. Since they are thinner than the depth of the machine, I usually turn them once. Let them cook until lightly browned--they're tasty!

Have you tried grilling vegetables? I slice zucchini in half lengthwise, onion in 3/4" slices, bell peppers in sections, etc. Spray with cooking spray and lightly sprinkle with various seasonings, your choice. They're wonderful!

I try to make life as convenient as possible, not that I'm lazy or something. In the kitchen that includes buying extra measuring tools (spoons, cups). For instance, I have a bread machine and keep the major ingredients together in one part of my cabinets. In each canister, I leave the measuring device appropriate for that ingredient so that it is always handy, i.e., teaspoon in the salt, 1/2 C measure in the bread flour, etc. It saves time hunting for the right tool. Use this tip for any recipe that you often repeat.
