Kwik'n'Easy Potato Soup

20 ounces potatoes -- 1/4" dice
1 cup onion -- 1/4" dice
Cavendar's Greek seasoning
14 ounces chicken broth
8 tablespoons low-fat sour cream

Dice potatoes and onion in very small dice. Combine in large microwavable bowl. Sprinkle generously with Cavendar's (or other seasoning mixture with salt and pepper.)

Cover and microwave 6 minutes. Stir thoroughly and microwave another 6 minutes.

Using the back of a large spoon, mash potatoes gently.

Stir in can of broth. Microwave another 5 minutes.

Stir in sour cream. Serve.
