Party in Your Mouth Chicken

4 chicken breast, no skin, no bone, R-T-C
1/2 c lime juice
1 tsp black pepper
1 tsp chili powder
1 tbsp olive oil

1 c corn -- frozen, thawed
1 tomato -- diced
1/4 c bell pepper -- chopped
1 tbsp lime juice
1/2 tsp ground cumin

As I found it on the internet:
Start with the chicken: Cut into 1" pieces. Combine lime juice, black pepper, chili powder, and olive oil. Pour this over chicken breast pieces. Toss to coat and let this soak until you are ready to cook.

Then, in another bowl, make salsa by combining (thawed) frozen corn, tomato, bell pepper, onion (purple, if you have it), lime juice, and cumin.

The Chicken can be cooked in a non-stick pan, your Wok, or grilled on a George Foreman-type grill. Just put chicken in pan, Wok or on grill; cook and toss about 7 minutes or until cooked through. Place cooked chicken pieces on a serving platter and smother with your homemade salsa.

This can be served with a side of rice, baked potato or a nice green salad.

My notes:
1. I used 1 lb. frozen chicken tenders.
2. Chicken should be marinated in a non-reactive pan, such as glass.
3. RealLemon also bottles lime juice which works fine in the recipe.
4. I substituted 2 green onions.
5. My husband thought the black pepper on the chicken was too much.
6. I drained the marinated chicken and cooked it in a Wok-type pan and separately boiled the marinade for a couple of minutes, adding it to the chicken before serving.
