1 tortilla, 98% FF, lg
2 tbsp salsa or picante
2 oz chicken breast, no skin, no bone, R-T-C
1 green onion -- chopped
1/4 green pepper -- chopped
2 tbsp salad olives, sliced
2 tbsp cheddar cheese, shredded

1 tsp garlic cloves -- minced
400°
Lightly spray tortilla on one side with cooking spray. Place on cookie sheet or pizza pan. On other side spread salsa (or substitute picante). The sauce will not cover completely. Top tortilla with green onion and salad olives.
Sauté chicken breast. Sprinkle generously with cumin (or your favorite herb) and minced garlic. As it cooks, it can be chopped in the pan into fairly small pieces. (2 ounces of chicken breast is equal to one or two tenderloins or half of a chicken breast half.) Quickly brown green pepper using cooking spray in the same pan. Add the chicken and green pepper to the tortilla.
Top with cheddar.
Bake 10 minutes until cheese is melted and beginning to brown.

(generous serving for one or lunch serving for two persons.)
Fat could be reduced using a lowfat cheese and no olives.
May substitute 1 or 2 slices of regular onion for the green onion.
